How is it that news sites and fan sites can talk about rich and famous people and not get sued?

Freedom of the press.

And as a matter of fact, they could get sued. To win a libel suit, the plaintiff would have to prove that the site knowingly presented a falsehood and showed reckless disregard for the truth. The celebrity could be awarded damages if they could prove that the site affected their career or reputation.

Most celebrities wouldn’t bother suing a little website over some trash talk, but there have definitely been cases where celebrities have won libel cases. Usually, the defendants were idiotic tabloids that nobody should bother to read in the first place.
